Royal appointment is a piece of cake

SWEET-TOOTHED Mandy Ferguson is used to baking cakes for her family.

But her latest culinary creation was by royal appointment.

For Mandy, 37, from Broadoak, Ashton baked the Queen and Prince Philip’s diamond wedding anniversary cake.

Hand-crafted

Mandy works at McVitie and Price in Halifax and used to work at Park Cakes in Oldham.

McVitie was approached by Buckingham Palace to design and produce an anniversary cake as it had made the royal wedding cake 60 years ago.

Mandy is one of the most experienced cake-makers at the company.

Coated in marzipan and adorned with hand-crafted edible decorations, the two-tier cake contained sultanas, raisins, currants, lemon zest and pecans, brandy and spices.

Elizabeth Giles, cake director at McVitie’s, said the anniversary cake contained a blend of the same ingredients used in the original royal wedding cake.

She said: "We were delighted to contribute to HM The Queen’s and HRH Duke of Edinburgh’s 60th wedding anniversary.

"McVitie’s made an amazing wedding cake 60 years ago and we are thrilled to continue the tradition of quality and excellence in cake baking for their anniversary."
